聚甘油蓖麻醇酯
层巧克力的流动性,降低可可脂用量,减薄巧克力涂层厚度和易加工性。聚甘油蓖麻醇酸酯具有良好的热稳定性,在90℃下保持14天,其色泽变化极小。其亲油基团为缩聚蓖麻油酸,亲水基团为聚甘油基团,在油脂中的溶解性良好,属油包水(W/O)型乳化剂,不溶于水和丙二醇,其最重要的特性,是能降低巧克力浆料的粘度从而提高其流动性,与卵磷脂混合使用时有良好的协同作用。在巧克力中加入0.3%的聚甘油蓖麻醇酸酯和0.3%的卵磷脂,其剪切应力约可降低50%,因此可降低可可脂的用量,减薄巧克力涂层的厚度,提高易加工性

4. in humid conditions, can reduce the viscosity. And form chocolate sugar coat quickly. And accelerate its conglutination . And increase adhesion, reducing the small pores.
